Momofuku Milk Bar's "Crack Pie"


                                                                               This recipe  was so delicious. I took one look at the
picture on the original site and had to have it. It is a bit time consuming but I think you will agree it is worth the time. Also another thing it is pure sugar heavy thick sugar! It did not stop me. The Oatmeal Cookie Crust is also a little bite of Heaven. Well with those warning's here we go




Oat Cookie Crust

9 tbs unsalted butter room temperature - divided  6 tbs and 2 tbs
5 1/2 tbs packed brown sugar -divided 4 tbs and 1 1/2 tbs
2 tbs of white sugar
1 large egg
3/4 cup plus 2 tbs old fashioned oats
1/2 cup all-purpose flour
1/8 tsp baking power
1/8 tsp of baking soda
1/4 tsp kosher salt




Cookie Crust Prep

Place your oven rack in the center of the oven. Preheat your oven to 350 degreez. Line a cookie/sheet pan (cookie sheet) with parchment paper.

In a medium bowl/mixer  combine
6 tablespoons  softened butter
4 tablespoons  brown sugar
2 tablespoons of white sugar






Beat until fluffy for 2 minutes. Now add the egg and beat until pale and fluffy app. 1 minute. Last add your oats, flour, baking power, baking soda salt and beat an additional 1 minutes.
                                                                                          


Pour your mixture onto the cookie sheet and shape into a large oatmeal cookie.









Bake until golden brown about 15 minutes check it - It does not have to be crunchy mine was not crunchy and crumbled just fine. Now transfer it to a cookie rack to cool. It could take up to an hour.



While you are waiting you can get all the other ingredients ready and prep your pie pan. Spray your pie pan with cooking spray or grease it with Crisco make it not stick.

Ok let us get your crust ready then we will do the filling.




Take your big cookie and crumble the cookie . Make sure there are no big pieces of cookie this is a crust.




Now once that is done take a mixing bowl add your other 3 tablespoons of softened butter and 1 1/2 tablespoons of brown sugar and add it to the crumbled cookie. Gently mix all the ingredients together until the mixture is moist and every piece is coated. It should stick together when you press it between your fingertips.







Now pour the cookie mixture into your greased pie pan. Using your finger gently press the mixture into the pan. Look at the picture to get a better idea of how this should look. It needs to be up the edges of the pan. Also put your pie pan on the cookie sheet you were using. This will keep small particles from falling and burning on the bottom of your oven. Now we will move on to the filling. Oh Yes!










Filling for Pie

3/4 cup granulated sugar
1/2 cup packed brown sugar
1 teaspoon powder milk
1/4 teaspoon salt
1/2 cup unsalted butter that is 1 stick melted and cooled slightly
6 1/2 teaspoon of heavy cream
4 large egg yolks
1 teaspoon pure vanilla extract
powder sugar for dusting.

Personally I topped it with everything from jams to whipping cream. Let us get cooking!


Keeping the oven temperature the same as the crust instructions just make sure you have a piece of aluminum in case your oven brown's it faster than needed. Use it to cover it if needed. You need a whisk and a medium bowl for preparing the gut's.



Whisk both sugars, powder milk and salt together
in your medium bowl. Add your melted butter and whisk
until blended.




Add your cream then egg yolks










Last add your vanilla and whisk until well blended.




Now you are ready to get cooking.









Pour your filling into your cookie crust.







Bake your pie for 30 minutes. Check your pie after 15 minutes make sure it is not bubbling and if it is than turn down the temperature to 325 degrees.  You want your pie to be brown on the top and still have a bit of a giggle in the center. So after the first 30 minutes check again if it is to brown cover it with a loose foil top and continue cooking for approximately 20 minutes.



Cool your pie in the pie pan on a cooling rack. Chill overnight I know that is the hard part. If you can not wait do it in the morning and it will be ready for dinner. Once chilled sprinkle with power sugar or any topping you like. Taste it first so you can see how Sweet-it-is.
