Chorizo & Spinach Quiche

First the thing that gives me a bit of a giggle is when I Google other Quiche's and see "Crust-less" Quiche well people Quiche is crust-less here is a quick what is a Quiche Vs Frittata definition . Enough of that on to our recipe. I have made quiche so many times when I have left over's and need a quick dinner. The beauty of this is the next day it is so easy to cut and serve.

Ingredients

1/2 lb. bulk Chorizo Sausage
4 scallion onions chopped
2 tbsp. of Olive Oil ( or any other mild flavor olive oil )
1/2 lb. cooked and squeezed spinach finely chopped
1 cup of fresh chopped parsley
1 tsp salt
1/2 tsp  pepper
1 cup mild Cheddar cheese
1 1/2 tbsp. of sifted flour
3 eggs beaten
1/4 cup of heavy cream

Fully cook the sausage with the oil, salt and pepper.
Drain the sausage and set aside.

Chop the spinach and then add it to the sausage.

Add the parsley and salt and pepper. Let the sausage/spinach mixture cool slightly so you do not cook the egg mixture when you mix it together.

Mix the eggs with the flour and the cream using a whisk. Now add the meat mixture until well combined. Last thing to add is the cheese mix everything well and pop it into a warm oven.

Bake at 375 for 35/40 minutes.

What a happy helper I have tonight. That is Mrs. Jassem my Daughter-in-love.
