Walnuts are a wonderful addition to any salad. These healthy little gems take on a whole new taste with a little sweet added. You can
buy them at the store. Homemade candied walnuts are always better than store bought. And things just taste better when you make them yourself!
Ingredients
2 cups of walnuts
1 cup of sugar
1/3 of a cup of water
2 tbsp of corn syrup
1 tsp salt
2 teaspoons of cinnamon
1 tsp of vanilla (or one vanilla bean) *Optional
Take 2 cups of walnuts and spread onto a cookie sheet. Roast them in an oven at 350 for about 5 minutes. I do mine in an iron skillet. Once they get a little brown-er tone to them remove from the oven. Do not over cook because they
will taste burnt even if over done a little.
Once they are out of the oven let the walnuts cool , wait about 20 minutes then mix your orated walnuts with the wet ingredients as follows.
Cook
the sugar, water and syrup and salt until it is bubbly. Watch your syrup. Now once it is bubbly
or if you want to use a thermometer it should approximately 233 degrees. Once your liquid is at the right temperature turn the heat down.
Add the vanilla and the cinnamon it will fizzle - but that is normal
( I like real vanilla bean so I will get one cut it scrape out
the guts and bake the pod in the syrup and take the pod out before I add
it to the nuts)
Now put the cooled nuts on a flat pan I think
if you do it in a bowl they do not get covered well enough and they all
need a little coat. Pour the syrup over and mix them well.
Pour the nuts onto some wax paper or parchment on a cookie sheet or flat surface. Let them cool then break them up.
Tomorrow use these in a great little salad and I will be in salad heaven.
Keep them refrigerated
