Ingredients
2 cups of walnuts
1 cup of sugar
1/3 of a cup of water
2 tbsp of corn syrup
1 tsp salt
2 teaspoons of cinnamon
1 tsp of vanilla (or one vanilla bean) *Optional
Take 2 cups of walnuts and spread onto a cookie sheet. Roast them in an oven at 350 for about 5 minutes. I do mine in an iron skillet. Once they get a little brown-er tone to them remove from the oven. Do not over cook because they will taste burnt even if over done a little.
Once they are out of the oven let the walnuts cool , wait about 20 minutes then mix your orated walnuts with the wet ingredients as follows.
Add the vanilla and the cinnamon it will fizzle - but that is normal
( I like real vanilla bean so I will get one cut it scrape out the guts and bake the pod in the syrup and take the pod out before I add it to the nuts)
Now put the cooled nuts on a flat pan I think if you do it in a bowl they do not get covered well enough and they all need a little coat. Pour the syrup over and mix them well.
Pour the nuts onto some wax paper or parchment on a cookie sheet or flat surface. Let them cool then break them up.
Tomorrow use these in a great little salad and I will be in salad heaven.
Keep them refrigerated
